Ingredients

  • 1 lb ground beef 80/20 for max juiciness
  • 4 brioche buns or potato rolls
  • 1 cup shredded cheddar or Dubliner cheese for Irish flair
  • 1 onion thinly sliced (sweet or yellow)
  • 2 tbsp mayo or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Butter for toasting buns

Instructions

Caramelize the Onions:

  • Heat a skillet over medium-low heat.
  • Add sliced onions + a pinch of salt.
  • Cook 15-20 minutes, stirring occasionally, until golden and soft.

Prepare the Patties:

  • In a bowl, mix beef, garlic powder, paprika, salt, and pepper.
  • Gently form into 4 patties (wider than the buns, they’ll shrink!).
  • Press a thumbprint into the center to prevent puffing.

Cook the Burgers:

  • Heat a skillet over medium-high heat.
  • Sear patties for 3-4 minutes per side.
  • In the last minute, add cheese and cover the pan to melt it.

Toast the Buns:

  • Spread butter on both sides of each bun.
  • Toast in the skillet 1-2 minutes until golden brown.

Assemble the Burgers:

  • Mix mayo and Dijon mustard, then spread on the bottom bun.
  • Layer patty, caramelized onions, and any extras.
  • Add the top bun and enjoy!

Notes

  • Crispy fries (classic pairing)
  • Coleslaw (adds crunch!)
  • Pickled veggies (for tangy contrast)
  • Onion rings (extra crispy, please)
