- 1 lb ground beef 80/20 for max juiciness
- 4 brioche buns or potato rolls
- 1 cup shredded cheddar or Dubliner cheese for Irish flair
- 1 onion thinly sliced (sweet or yellow)
- 2 tbsp mayo or Greek yogurt
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper to taste
- Butter for toasting buns
Caramelize the Onions:
Heat a skillet over medium-low heat.
Add sliced onions + a pinch of salt.
Cook 15-20 minutes, stirring occasionally, until golden and soft.
Prepare the Patties:
In a bowl, mix beef, garlic powder, paprika, salt, and pepper.
Gently form into 4 patties (wider than the buns, they’ll shrink!).
Press a thumbprint into the center to prevent puffing.
Cook the Burgers:
Heat a skillet over medium-high heat.
Sear patties for 3-4 minutes per side.
In the last minute, add cheese and cover the pan to melt it.
Assemble the Burgers:
Mix mayo and Dijon mustard, then spread on the bottom bun.
Layer patty, caramelized onions, and any extras.
Add the top bun and enjoy!
