Ingredients
  

  • For the Fries:
  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper optional, for heat
  • Salt and pepper to taste
  • For the Dip:
  • 1/2 cup Greek yogurt or sour cream
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven:
  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Prepare the sweet potatoes:
  • Peel the sweet potatoes and cut them into thin fries, keeping them roughly the same size for even cooking.
  • Season the fries:
  • Toss the fries in a bowl with olive oil, paprika, garlic powder, cayenne (if using), salt, and pepper until they’re well coated.
  • Bake the fries:
  • Spread the fries in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  • Make the dip:
  • While the fries bake, mix together Greek yogurt, honey, Dijon mustard, paprika, cayenne (if using), and a pinch of salt and pepper in a small bowl until smooth.
  • Serve:
  • Once the fries are crispy and golden, serve them hot with the creamy dip on the side. Enjoy!

Notes

  • Make-ahead tip: You can cut the sweet potatoes in advance and store them in water in the fridge for up to a few hours. Bake them fresh for the best crispiness.
