Sweet Potato Fries with Dip

- For the Fries:
- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper optional, for heat
- Salt and pepper to taste
- For the Dip:
- 1/2 cup Greek yogurt or sour cream
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper optional
- Salt and pepper to taste
Preheat the oven:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare the sweet potatoes:
Peel the sweet potatoes and cut them into thin fries, keeping them roughly the same size for even cooking.
Season the fries:
Toss the fries in a bowl with olive oil, paprika, garlic powder, cayenne (if using), salt, and pepper until they’re well coated.
Bake the fries:
Spread the fries in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Make the dip:
While the fries bake, mix together Greek yogurt, honey, Dijon mustard, paprika, cayenne (if using), and a pinch of salt and pepper in a small bowl until smooth.
