Ingredients

  • 1 lb fresh green beans trimmed
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes optional, for a little heat
  • Salt and pepper to taste
  • 1 tablespoon lemon juice optional, for brightness

Instructions

  • Blanch the green beans:
  • Bring a large pot of water to a boil and add the green beans. Cook for about 3-4 minutes, just until tender-crisp. Drain and transfer to a bowl of ice water to stop the cooking process.
  • Sauté the garlic:
  • Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • Cook the green beans:
  • Add the blanched green beans to the skillet. Stir to coat them in the garlic oil, and sauté for another 4-5 minutes, until they’re heated through and slightly crispy.
  • Season and serve:
  • Sprinkle with onion powder, red pepper flakes (if using), salt, and pepper. Drizzle with lemon juice, if desired, and serve immediately.

Notes

  • Freezing: If you want to prep in advance, blanch the green beans and freeze them. Just sauté them straight from the freezer when ready to cook.
  • Customization: Feel free to add extra ingredients like toasted almonds, bacon bits (if you eat bacon!), or a sprinkle of Parmesan for an extra flavor boost.
