Homemade Egg Noodles

Soft, tender, and easy to make, these homemade egg noodles are a game-changer. Ingredients
  

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil or melted butter
  • 1/4 cup water adjust as needed

Instructions
 

  • Make the dough
  • In a large mixing bowl, combine the flour and salt.
  • Create a well in the center and crack in the eggs.
  • Add the olive oil (or melted butter) and a little water.
  • Mix everything together until a dough begins to form. You can use a spoon or your hands for this.
  • Knead the dough
  • Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
  • If the dough is too sticky, add more flour. If too dry, add water, a teaspoon at a time.
  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  • Roll out the dough
  • Once rested, divide the dough into two portions.
  • Roll each portion out on a floured surface until very thin (about 1/8 inch thick), dusting with flour as needed.
  • Cut the noodles
  • Use a sharp knife or pizza cutter to slice the dough into strips (1/4 to 1/2 inch wide).
  • For even noodles, fold the dough and cut through the layers.
  • Cook the noodles
  • Bring a large pot of salted water to a boil.
  • Carefully drop the noodles into the boiling water, stirring occasionally.
  • Cook for 4-5 minutes, or until the noodles float and are tender.
  • Drain and serve with your favorite sauce, soup, or just some butter and Parmesan.

Notes

  • Rest the dough: Let the dough rest to relax the gluten, making it easier to roll out and creating a tender texture.
  • Thickness: Roll the dough thin for softer noodles; for heartier noodles, roll it thicker.
  • Flour the surface: Keep your rolling surface floured to prevent sticking.
  • Add flavor: Try adding garlic powder, herbs, or Parmesan cheese to the dough for extra flavor.
