Make the dough
In a large mixing bowl, combine the flour and salt.
Create a well in the center and crack in the eggs.
Add the olive oil (or melted butter) and a little water.
Mix everything together until a dough begins to form. You can use a spoon or your hands for this.
Knead the dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
If the dough is too sticky, add more flour. If too dry, add water, a teaspoon at a time.
Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Roll out the dough
Once rested, divide the dough into two portions.
Roll each portion out on a floured surface until very thin (about 1/8 inch thick), dusting with flour as needed.
Cut the noodles
Use a sharp knife or pizza cutter to slice the dough into strips (1/4 to 1/2 inch wide).
For even noodles, fold the dough and cut through the layers.
Cook the noodles
Bring a large pot of salted water to a boil.
Carefully drop the noodles into the boiling water, stirring occasionally.
Cook for 4-5 minutes, or until the noodles float and are tender.
Drain and serve with your favorite sauce, soup, or just some butter and Parmesan.
