Ingredients
  

  • 1 lb ground turkey or ground chicken/beef
  • 2 large sweet potatoes cubed
  • 1 onion chopped
  • 2 garlic cloves minced (or ½ tsp garlic powder)
  • 1 cup fresh spinach or kale
  • 1 tsp paprika smoked or regular
  • 1 tsp cumin
  • ½ tsp salt adjust to taste
  • ½ tsp black pepper
  • ½ cup shredded cheese cheddar, mozzarella, or dairy-free
  • 2 tbsp olive oil or preferred cooking oil

Instructions
 

Roast the Sweet Potatoes

  • Preheat oven to 400°F (200°C).
  • Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper.
  • Spread on a baking sheet and roast for 20 minutes, flipping halfway through.
  • 🔥 Pro Tip: Microwave sweet potatoes for 2 minutes before chopping to soften them!

Cook the Ground Turkey

  • Heat 1 tbsp olive oil in a skillet over medium-high heat.
  • Add onions and garlic, sauté until fragrant (about 2 minutes).
  • Add ground turkey, breaking it apart as it cooks. Cook until browned (5-7 minutes).
  • Season with paprika, cumin, salt, and pepper. Stir in spinach and cook for 1 minute until wilted.
  • 🌶️ Spice It Up: Add red pepper flakes or a splash of hot sauce!

Assemble & Bake

  • Grease a 9x13” baking dish.
  • Layer roasted sweet potatoes on the bottom.
  • Spread ground turkey mixture evenly over the potatoes.
  • Sprinkle cheese on top.
  • Bake for 15 minutes until cheese is melted.
  • Broil for 2 minutes for crispy golden cheese (optional).
