- For the Chicken:
- 2 boneless skinless chicken breasts (or thighs), cut into bite-sized pieces
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- For the Vegetables:
- 1 small zucchini sliced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 small red onion thinly sliced
- 1 cup cherry tomatoes halved
- 2 cups baby spinach
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- For the Sauce:
- 2 cloves garlic minced
- ¼ cup low-sodium chicken broth
- 1 tablespoon balsamic vinegar
- ½ teaspoon red pepper flakes optional
- Juice of ½ lemon
Season the Chicken:
In a bowl, toss chicken with salt, pepper, garlic powder, and smoked paprika.
Cook the Chicken:
