For the Skillet 1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 onion, chopped
2 garlic cloves, minced
1 tsp smoked paprika
1 tsp cumin
1 tbsp olive oil
1 cup spinach (or kale)
Salt and pepper, to taste
Optional Add-ins Shredded cheese (cheddar or mozzarella)
Avocado slices
Hot sauce
Dice the sweet potatoes into small cubes. Microwave for 2 minutes to speed up cooking.
Heat olive oil in a large skillet over medium heat. Add sweet potatoes and onions. SautΓ© for 10-12 minutes until tender.
Move the veggies to one side and add the ground turkey. Break it apart and cook until browned, about 5-7 minutes.
Season with paprika, cumin, salt, and pepper. Stir everything together.
Add minced garlic and cook for 1 more minute until fragrant.
Stir in the spinach and cook until wilted.
Sprinkle cheese on top, cover the skillet, and let it melt for 1-2 minutes.
Garnish with avocado slices or a drizzle of hot sauce. Serve warm!
To save time, pre-cut sweet potatoes or use frozen ones.
Double the batch and store leftovers in the fridge for up to 4 days.
