For the Skillet

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp olive oil
  • 1 cup spinach (or kale)
  • Salt and pepper, to taste

Optional Add-ins

  • Shredded cheese (cheddar or mozzarella)
  • Avocado slices
  • Hot sauce
  • Dice the sweet potatoes into small cubes. Microwave for 2 minutes to speed up cooking.
  • Heat olive oil in a large skillet over medium heat. Add sweet potatoes and onions. SautΓ© for 10-12 minutes until tender.
  • Move the veggies to one side and add the ground turkey. Break it apart and cook until browned, about 5-7 minutes.
  • Season with paprika, cumin, salt, and pepper. Stir everything together.
  • Add minced garlic and cook for 1 more minute until fragrant.
  • Stir in the spinach and cook until wilted.
  • Sprinkle cheese on top, cover the skillet, and let it melt for 1-2 minutes.
  • Garnish with avocado slices or a drizzle of hot sauce. Serve warm!

Notes

  • To save time, pre-cut sweet potatoes or use frozen ones.
  • Double the batch and store leftovers in the fridge for up to 4 days.
  • For extra protein, add black beans or a fried egg on top!
