Ingredients
  

For the Chicken:

  • 2 large chicken breasts or thighs, if preferred
  • Salt and pepper to taste

For the Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme or rosemary

For the Sandwich:

  • 4 sandwich rolls or pieces of ciabatta bread
  • 4 slices of cheese cheddar, Swiss, or provolone
  • Fresh lettuce leaves
  • Tomato slices
  • Red onion slices optional

For the Special Sauce:

  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • A squeeze of lemon juice
  • Salt and pepper to taste

Optional for Extra Crunch:

  • A handful of crispy fried onions or toasted panko breadcrumbs

Instructions
 

Marinate the Chicken:

  • In a bowl, mix the olive oil, lemon juice, minced garlic, smoked paprika, dried thyme, and a pinch of salt and pepper.
  • Place the chicken in a shallow dish or a resealable plastic bag, pour the marinade over it, and ensure each piece is well coated.
  • Refrigerate for 30 minutes to let the flavors soak in.

Cook the Chicken:

  • Heat a pan over medium-high heat and add a splash of olive oil.
  • Remove the chicken from the marinade and cook it in the pan for about 5–6 minutes on each side until it’s golden brown and the internal temperature reaches 165°F (75°C).
  • Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.

Prepare the Special Sauce:

  • In a small bowl, combine the mayonnaise, Dijon mustard, honey, a squeeze of lemon juice, and a pinch of salt and pepper.
  • Whisk until the sauce is smooth and well blended.

Assemble the Sandwich:

  • (Optional) Toast the sandwich rolls or ciabatta bread lightly to add a bit of crunch.
  • Spread a generous amount of the special sauce on both halves of the bread.
  • Slice the rested chicken into strips and layer them on the bottom half of the bread.
  • Top with a slice of cheese (the warmth of the chicken will help it melt slightly), fresh lettuce, tomato slices, and red onion if you’re using it.
  • For extra crunch, sprinkle some crispy fried onions or toasted panko breadcrumbs over the chicken layer.
  • Cover with the top half of the bread.
