For the Chicken:
- 2 large chicken breasts or thighs, if preferred
- Salt and pepper to taste
For the Marinade:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 3 garlic cloves minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme or rosemary
For the Sandwich:
- 4 sandwich rolls or pieces of ciabatta bread
- 4 slices of cheese cheddar, Swiss, or provolone
- Fresh lettuce leaves
- Tomato slices
- Red onion slices optional
For the Special Sauce:
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- A squeeze of lemon juice
- Salt and pepper to taste
Optional for Extra Crunch:
- A handful of crispy fried onions or toasted panko breadcrumbs
Marinate the Chicken:
In a bowl, mix the olive oil, lemon juice, minced garlic, smoked paprika, dried thyme, and a pinch of salt and pepper.
Place the chicken in a shallow dish or a resealable plastic bag, pour the marinade over it, and ensure each piece is well coated.
Refrigerate for 30 minutes to let the flavors soak in.
Cook the Chicken:
Heat a pan over medium-high heat and add a splash of olive oil.
Remove the chicken from the marinade and cook it in the pan for about 5–6 minutes on each side until it’s golden brown and the internal temperature reaches 165°F (75°C).
Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.
Prepare the Special Sauce:
In a small bowl, combine the mayonnaise, Dijon mustard, honey, a squeeze of lemon juice, and a pinch of salt and pepper.
Whisk until the sauce is smooth and well blended.
Assemble the Sandwich:
(Optional) Toast the sandwich rolls or ciabatta bread lightly to add a bit of crunch.
Spread a generous amount of the special sauce on both halves of the bread.
Slice the rested chicken into strips and layer them on the bottom half of the bread.
Top with a slice of cheese (the warmth of the chicken will help it melt slightly), fresh lettuce, tomato slices, and red onion if you’re using it.
For extra crunch, sprinkle some crispy fried onions or toasted panko breadcrumbs over the chicken layer.
Cover with the top half of the bread.
