French Onion Soup

Ingredients
  

  • 4 large yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cups beef broth
  • 1 cup dry white wine optional
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1/2 tsp sugar optional, for caramelizing
  • 4 slices of French bread
  • 1 1/2 cups shredded Gruyère cheese or Swiss cheese
  • 1/2 cup grated Parmesan cheese

Instructions
 

Caramelize the Onions:

  • In a large pot, melt the butter and olive oil over medium heat. Add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, for 25–30 minutes until the onions are golden brown and caramelized. Add a pinch of sugar halfway through for extra caramelization.

Prepare the Soup Base:

  • Once the onions are caramelized, stir in the thyme and bay leaf. Pour in the beef broth (and wine, if using). Bring the mixture to a simmer and cook for about 20 minutes. Season with salt and pepper to taste.

Toast the Bread:

  • While the soup simmers, toast the French bread slices until crispy and golden.

Assemble the Soup:

  • Ladle the hot soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl of soup.

Broil the Cheese:

  • Top each bowl of soup with a generous amount of shredded Gruyère and Parmesan cheese. Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Serve and Enjoy:

  • Carefully remove the bowls from the oven (they’ll be hot!) and serve your French Onion Soup while it’s steaming and cheesy. Enjoy this deliciously rich, comforting meal! 🧅🍲

Notes

Contains dairy and gluten. For a gluten-free version, use gluten-free bread and dairy-free cheese. Be sure to check broth for gluten if using store-bought.
