French Onion Soup

- 4 large yellow onions thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 4 cups beef broth
- 1 cup dry white wine optional
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- 1 bay leaf
- 1 tsp salt or to taste
- 1/2 tsp black pepper or to taste
- 1/2 tsp sugar optional, for caramelizing
- 4 slices of French bread
- 1 1/2 cups shredded Gruyère cheese or Swiss cheese
- 1/2 cup grated Parmesan cheese
Caramelize the Onions:
In a large pot, melt the butter and olive oil over medium heat. Add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, for 25–30 minutes until the onions are golden brown and caramelized. Add a pinch of sugar halfway through for extra caramelization.
Prepare the Soup Base:
Once the onions are caramelized, stir in the thyme and bay leaf. Pour in the beef broth (and wine, if using). Bring the mixture to a simmer and cook for about 20 minutes. Season with salt and pepper to taste.
Contains dairy and gluten. For a gluten-free version, use gluten-free bread and dairy-free cheese. Be sure to check broth for gluten if using store-bought.
