Cucumber and Tomato Salad

- 2 cups cucumber sliced (English or Persian cucumbers work best)
- 1 1/2 cups cherry or grape tomatoes halved
- 1/4 cup red onion thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon vinegar red wine or apple cider
- 1 teaspoon lemon juice optional
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley or dill chopped
Prep your veggies:
Slice cucumbers, halve the tomatoes, and thinly slice the red onion. Place them in a large mixing bowl.
Whisk up the dressing:
