Prep Time 10 minutes mins
Total Time 10 minutes mins
- 1 large cucumber
- 1/2 cup cream cheese softened
- 1 tablespoon fresh dill chopped (or parsley, chives)
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Optional: Sliced smoked salmon or cherry tomatoes for topping
Prepare the cucumber:
Slice the cucumber into thick rounds, about 1/2 inch each. You can peel the cucumber if you prefer, or leave the skin on for extra texture and nutrients.
Make the cream cheese mixture:
In a small bowl, mix the softened cream cheese, lemon juice, and fresh dill. Season with salt and pepper to taste. If you want a smoother texture, you can mix in a little Greek yogurt or sour cream.
Assemble the bites:
Spoon a dollop of the cream cheese mixture onto each cucumber slice and gently spread it out.
Serve:
If you like, top with additional dill, smoked salmon, or cherry tomato slices for extra flavor. Serve immediately and enjoy!
- Storage tip: If you’re making them ahead, store the cucumber slices separately from the cream cheese mixture to prevent them from getting soggy. Assemble them just before serving for the freshest results.
