Ingredients
  

For the Chicken:

  • 2 chicken breasts cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 egg beaten
  • 1 ½ cups panko breadcrumbs
  • Oil for frying vegetable or preferred choice

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon honey
  • 1 tablespoon Sriracha adjust for spice level
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

For Garnish (Optional):

  • Chopped green onions
  • Sesame seeds
  • Fresh cilantro

Instructions
 

  • 1️⃣ Marinate the Chicken:
  • Place chicken pieces in a bowl and pour buttermilk over them. Let marinate for at least 15 minutes (or up to 1 hour for extra tenderness).
  • 2️⃣ Prepare the Breading:
  • In one bowl, mix flour, salt, black pepper, paprika, and garlic powder.
  • In a second bowl, beat the egg.
  • In a third bowl, add the panko breadcrumbs.
  • 3️⃣ Coat the Chicken:
  • Remove chicken from buttermilk, shake off excess, and coat it in the flour mixture.
  • Dip into the beaten egg, then coat in panko breadcrumbs, pressing gently to adhere.
  • 4️⃣ Fry the Chicken:
  • Heat about 1 inch of oil in a pan over medium-high heat.
  • Fry chicken in small batches for 3-4 minutes per side until golden brown.
  • Transfer to a paper towel-lined plate to drain excess oil.
  • 5️⃣ Prepare the Bang Bang Sauce:
  • In a bowl, mix mayonnaise, sweet chili sauce, honey, Sriracha, garlic powder, and lime juice. Adjust to taste.
  • 6️⃣ Toss or Drizzle:
  • Toss fried chicken in the sauce for full coating or serve as a dipping sauce on the side.
  • 7️⃣ Garnish & Serve:
  • Sprinkle with green onions, sesame seeds, and cilantro. Enjoy over rice, in tacos, or as an appetizer!

Notes

Air Fryer Option: Cook at 400°F for 15 minutes, flipping halfway.
Baking Alternative: Bake at 400°F for 20 minutes.
Storage: Refrigerate leftovers for up to 3 days or freeze uncooked, breaded chicken for 1 month.
Reheating: Use an oven at 375°F for 10 minutes or an air fryer to keep crispy.
