Ingredients
  

  • 2 cups cooked chicken shredded rotisserie or grilled
  • 1 ripe avocado mashed or sliced
  • 1 cup shredded cheese cheddar, Monterey Jack, or pepper Jack
  • 4 slices bread sourdough or your favorite
  • 2 tbsp mayo or Greek yogurt for tanginess
  • 1 tbsp butter or olive oil
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • Salt & pepper to taste

Optional Add-ins:

  • Bacon bits
  • Pickled jalapeños
  • Tomato slices

Instructions
 

Prep the Chicken

  • Shred or chop cooked chicken.
  • Season with garlic powder, paprika, salt, and pepper.
  • Optional: Add a squeeze of lime for extra flavor.

Mash the Avocado

  • Mash avocado in a bowl, leaving it chunky or smooth.
  • Mix in a spoonful of mayo for extra creaminess.
  • Squeeze lemon juice to keep it from browning.

Assemble the Sandwich

  • Spread mayo on the outside of each bread slice (for crispy golden bread).
  • Layer: avocado mash → seasoned chicken → shredded cheese.
  • Press slices together.

Grill to Perfection

  • Heat a skillet over medium-low heat. Add butter or oil.
  • Cook sandwich for 3-4 minutes per side, covering with a lid for extra meltiness.
